Rutgers annual health summit

From pesticides and plastics to pathogens, toxic metals, additives, and ultra-processed foods—What are we really feeding our families?

The chemicals and contaminants in our food impact us all—but children are especially vulnerable. This year’s 8th annual summit explores how pollutants—from microplastics and heavy metals to synthetic additives and foodborne pathogens—enter our food systems and affect human health. Join researchers, advocates, and community members working for safer food systems and evidence-based tips for healthier eating.

Through a lifecycle lens, we’ll examine:

  • Plastic packaging and food contact materials
  • Agricultural and industrial pollutants in soil and water
  • Micro- and nanoplastics in seafood, produce, and processed goods
  • The health impacts of ultra-processed foods, additives, and preservatives
  • Foodborne pathogens and the risks they pose across supply chains
  • How food safety regulations affect what ends up on children’s plates
  • Community-driven strategies for food justice and health equity
